Elaichi Chaya isn't just a beverage; it's an emotion.The secret to that authentic 'Thattukada' (roadside shop) taste? It's the vigorous boiling and, crucially, the quality of the cardamom used.

Why Idukki Cardamom?

Unlike store-bought powder which loses flavor in days, freshly crushed Alham Spices Idukki Cardamom retains its volatile oils (cineole & terpinyl acetate). These oils release a potent, eucalyptus-like sweetness that perfectly counteracts the tannins in strong tea.

Ingredients

  • 1 cupWater
  • 1 cupWhole Milk (Full fat is best for creaminess)
  • 2 tspStrong Tea Powder (Dust tea preferred for color)
  • 3-4 podsAlham Spices Idukki Green Cardamom (Crushed)
  • 2-3 tspSugar (Adjust to taste)
  • Optional: 1 small slice of fresh ginger

Step-by-Step Instructions

Release the Aroma

Take the green cardamom pods and crush them gently using a mortar and pestle. Ensure the outer green skin splits and the black seeds inside are exposed. This is where the flavor lives.

The Golden Boil

In a saucepan, bring the water to a rolling boil. Toss in the crushed cardamom (and ginger if using). Let it boil for a full minute to infuse the water with the spice oils.

Brew the Decoction

Add the tea powder and sugar. Lower the heat to medium is let it simmer for 2-3 minutes. You want a dark, maroon-colored liquid (decoction).

The "Rising" Technique

Pour in the milk. Increase the heat. Watch closely as the tea rises and foams up. Lift the pan off the heat for a second, then put it back. Repeat this 2-3 times. This aerates the tea and makes it creamy.

Stretch & Serve

Strain the hot tea into a cup. For the authentic finish, pour the tea back and forth between two mugs from a height (called "stretching" or "adikkal"). This creates that signature froth on top.
